The Story
Our restaurant’s story begins with one particular Bubba, Christopher Diebel, managing partner of the restaurant. The Diebel family moved to Des Moines from Texas in 1993. In the South, it is customary for the male siblings to adopt the nickname. Despite the geographic change, the moniker stuck. Today, only his family and a few close friends call him Bubba, but the term serves as a constant reminder of Diebel’s roots.
Another thing customary in the South is delicious food on the table for every meal. The restaurant is inspired by the family meals Christopher enjoyed in his childhood, and the menu grew to extend to every corner of the foodie South. The Bubba team is committed to bringing a little Dixie to Des Moines with classics like shrimp & grits, po’ boys, fried green tomatoes, meat loaf and fried chicken. Specializing in Southern favorites and classic cocktails, Bubba offers a menu that is sure to please everyone – no matter where you hang your hat.
Southern cuisine is cozy, accessible and feels like home. It is best consumed with family and great friends. When it came time to give a southern comfort food concept a name, Bubba just fit.
